Happy National Donut Day

Is there such a thing as a healthy donut?  Isn’t that an oxymoron?  Its #NationalDonutDay and just because you may be on a renal diet, doesn’t mean you can’t enjoy a donut once in a great while.  We’ve found a sugar-free chocolate glazed recipe that won’t leave you feeling guilty!

Sugar-Free Chocolate Glazed Donuts

Prep Time 10 minutes
Cook Time 20 minutes
Servings 6 donuts (1 per person)
Calories 338 kcal per serving

Ingredients

Donut
1.5 cups almond flour (or 150 grams)
1/2 cups Swerve granulated (or 96 grams of your favorite sugar substitute)
2 tsps baking powder
1 tbsp vanilla extract get the good stuff — pure vanilla has the best flavor
1/4 tsp salt
3 large eggs
1/4 cup butter

Glaze
3/4 cup Swerve confectioners (108 grams)
2 tbsps unsweetened cocoa powder
1 tbsp butter
1 tsp vanilla extract
1 tbsp unsweetened almond milk
2 tbsp coconut milk

Instructions

  1. Preheat oven to 350°F and grease a donut pan. Place all of the ingredients in a blender and blend until smooth.
  2. Transfer the batter to the prepared donut pan and bake 15-20 minutes until a toothpick inserted into the middle of a donut comes out clean.
  3. In a small vessel mix together the glaze ingredients, microwave for 30 seconds until smooth then dip each donut into the glaze.
  4. Store in an airtight container in the refrigerator for up to 4 days.
