Pair with a side of kidney-friendly vegetables like asparagus because it’s low in potassium and can be easily prepared a variety of ways.
Ingredients:
– 2 cod fillets
– 1 lemon, sliced
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 2 tbsp fresh parsley, chopped
– Salt and pepper to taste
Instructions:
- Preheat oven to 400°F.
- Place cod fillets in a baking dish and sprinkle with salt and pepper.
- In a small bowl, whisk together olive oil, garlic, and parsley. Pour mixture over cod fillets, ensuring they are well-coated.
- Top fish with lemon slices and bake for 15-20 minutes or until fish is cooked through.
