Thanksgiving is a favorite holiday for many people. Having Chronic Kidney Disease (CKD) or End-Stage Renal Disease (ESRD) during this time of year can be especially challenging. Keeping in mind, the general diet principles for kidney patients are low-salt, low-potassium, low-phosphorus, low-protein, low-fat, high-vitamin, and high-fiber.  You don’t have to feel deprived and can enjoy a fantastic, tasty traditional Thanksgiving meal. Let’s start with a popular choice for the holiday…roasted turkey. Be sure to pay attention to your portion size!
